Recipe of the Month: Broiled Oysters


The taste of North Carolina oysters will shine through this simple but classic recipe from Joyce Taylor, contributed to the Mariner's Menu from NC Sea Grant. Try it the next time you get oysters from your local grower!

 

Fully preheat the broiler unless the oven manufacturer recommends differently. If your broiler has a temperature setting, turn it to 550 F. Leave the oven door open or closed according to the manufacturer’s instructions.


If you shuck the oysters, save the bottom half of the shell to serve these as an appetizer or simply serve on a platter.

  • 1 quart oysters, drained

  • 1 cup butter, melted

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper, freshly ground

  • 3 eggs, beaten

  • 4 cups fresh bread crumbs

Pat oysters dry. Add salt and pepper to melted butter. Dip each oyster in butter, then in eggs, then in bread crumbs. Broil about 4 inches from heat until golden brown on one side, about 5 minutes. Turn and repeat on the other side.
